Smoked sturgeon?

Hey guys, has anyone tried smoking keeper size sturgeon filet? How is it? Is it something even worth trying? Appreciate any advice.
 
Ive eaten a bunch from one of my uncles. Really firm texture, very tasty!
 
Sturgeon is more oily than halibut, and smokes up very well. If overdone it gets rubbery, so test it early and often. Slice the fillets into 5/8" steaks before brining.
 
Smoked sturgeon is the BOMB, Very worth doing...
