Swordfish in Wine Marinade: 4 swordfish steaks (3/4" thick) Combine: 3/4 cup white wine, 1/2 teaspoon salt, 1/2 teaspoon dry mustard, 1/4 cup lemon juice, Dash cayrnne pepper. Marinate steaks in mixture for 1 hour. Drain and save marinade. Sprinkle swordfish with salt and pepper. Broil for 5 minutes over hot coals. Turn and brush with butter. Broil for 5 minutes over hot coals. Turn and brush with butter. Broil another 5 to 7 minutes. Brush both sides with butter. Remove to warm platter and brush with remaining marinade. Serves 4.
