A grill is basically an outdoor oven in this situation. Not sure what "the other" type the recipe calls for, but you can control the temp on a propane grill much better than, say, a charcoal grill. You can always set a tin pan with burning briquettes or wood chips in the propane grill to get the flavor the smoke gives you. Now, if you have a Traeger, that's a horse of a different color.
