On most of my larger catches I don't worry about the fillets, I just leave a little meat on the bones. season well, Q on the grill. Done in just a few minutes on each side. Eat and enjoy watching your fillets cook. Oil from the bellies in the smoker enhance the flavors of your choice of brined catch (like bacon oil on your potatoes). Bellies have a very strong oily taste eat it or not. The bellies that I don't like I use for crab bait, the oils are mixed in with the frozen slurry of the pot bait bag. Tony
 
Salmon bellies especially chinook bellies, for us, were saved for the smoker, along with the collar plate. Awesome flavor, but napkins were a must!
