How do you handle your catch after its out of the water?

Just wondering how everybody handles there catch after it is caught. I know it will be different for some types of fish. I caught rock bass in newport and when i took them out of the live well to clean then i just smacked them over the head to knock them out.I have heard it is not good to knock them out cause it sends andrenaline through the meat and gives it a different taste. How is it done best?

I bonk, and knife the gill. Or just gill. I have a friend that sticks his knife in there head, but it looks dangerous to me. The fish I catch I like the idea of getting as much blood out that I can, its what goes foul first.

Just gills for me. Bleed them out.

I bleed my fish before I even get my wallet out to tag it, bleeding them while they are alive allows for the heart to pump out about every last drop, when possible, hang it upside down from a tree for best results (mainly Salmon).

Just don't try to bleed a Ling with your bare hands ;).
