Great lookin keeper Kalan!
I also Love fish and chips W/ tempura (or similar rice flower) batter! All of our sturgeon ends up becoming either fish and chips, Or gets smoked on our traeger over alder. MMMM one very easy recipe I use ALL the time: Slice filets accordingly for fish and chips, dip in tempura batter, drop in hot oil, pull out/let cool - eat. (note: I use 400degree oil, and a nice thermometer to check the meat. pull the fish out of the oil as soon as the thick parts of the meat reach 140degrees.. it takes less time than you think so be on top of checking the meat, don't walk away!) |

This one was filleted on the dock by an associate of Tiki Charters. It was a quick and excellent service. About half was cooked up fish & chips style on Memorial Day along with about a bushel of fresh oysters (on the grill) from a market in Astoria and 15 GIANT razor clams from a recent dig. It was an Oregon seafood celebration! Smoked sturgeon is a very good way to go... probably the best tasting fish out there!

Not sure if it is a problem, but I was told not to eat to much Sturgeon for the Willy or the Columbia. Bottom feeders and there are still health concerns from the up stream industry. I have eaten it and last time I looked I didn't glow in the dark, I also surfed most of my California life and we liked the warm water from the Nuclear Power Plant around San Onofri, good fishing too. Good tip troutski.. I don't eat Salmon out of the willamette even..
The Oregon fishing regulations warn you to not eat fish like catfish and sturgeon, bass, out of the willamette river, since that river is so full of toxins, PCB's, and who knows what else they "forget" to tell us. The river has enough rotting apples and other fruit to have caffeine show up on the readout when they test the water, Sound appealing? Not exactly. Even catching salmon in the clackamas doesnt make me feel ANY better since the fish was in willamette water for awhile. sure the willamette fish don't glow, but I'd really like to get some willamette fish tested with a gas mass spectrometer (gas chromatography, mass spectrometry- or other reliable test, not sure if GMS works with fish meat HAHA). I trust columbia fish over willamette fish, but that's partly to do with the paper mill's absolute lack of care for the environment.. woo hoo aren't we all glad that paper mill exists! |

There are some good reports about this fishery starting to go around. I am planning on taking my boat down in a couple of weeks.
Peace, Tom |

my fav for sturgeon and halibut is to get that pancake mix (krustex, the just add water stuff) and mix it w/ a nice tasty beer. roll fish in flour and dip in beer batter then careful place in 400 deg oil until medium dark brown. serve with cole slaw and home made jo jo's.
oofda!!! now thats what i call a meal.![]()
