EAT EM!!!!
Here's my favorite prep for salmon filets 1. Liberally rub the filets with lots of brown sugar, garlic powder and salt and pepper and dill weed. Wrap in plastic wrap and put in fridge for 1-4 hours 2. Fire the coals up, add apple wood chunks-- I cut my own- two or three works well 3. Prepare topping and dipping sauce: 2 cups mayo 1/2 cup brown sugar 2 teaspoons dill weed 1 1/2 tablespoons lime juice 2 teaspoons salt 1 teaspoons parsley flakes 1 ice cold beer Mix well, chill when colas are ready and wood smoky Place filets skin side down over coals, shut lid and vent, smoke em!!!! after 3 minutes top each filet liberally with sauce, reserve the remainder filets should be done after 5- 7 minutes, test with forkthickest part, do not over cook, if anything- UNDERCOOK, filets will continue cooking as you remove and serve them, filets should remove easily with spatuals leaving the skin stuck to the grill, I'm tellin yuh! Bon Apetite', oh, and the beer is for you to drink while sweatin over them coals. |
